GerMex Texas
![]() though most people reflexively associate Texas with cowboy culture, central Texas is the land where GerMex accordian polkas and no-vowel Czech names reign supreme.
German and Moravian emigration to Texas started in the 1840s and reached its peak in the years just before the Civil War. Through various colonial contracts, the Republic of Texas arranged with German noblemen to attract frontier settlers with money and land grants. By the mid-1850s, German and Moravian settlers had founded numerous communities around present-day Austin and San Antonio.
Luckily for us, the settlers brought their food, music and art forms -- including sausage making -- along for the ride.
